Gluten Free Banana Walnut Muffins

Banana Walnut Muffins


Makes 1 serving (6 muffins)


Ingredients 
  • 1 cup Gluten Free Oatmeal *
  • 4 Egg Whites 
  • 1 teaspoon Baking Powder
  • 1 scoop (30g) Vanilla Protein Powder **
  • 1/4 teaspoon of salt
  • 2 teaspoon of Stevia (or normal sugar)
  • 1 teaspoon of Natural Honey***
  • 1/2 teaspoon of Cinnamon Powder (optional)
  • 1 teaspoon of Vanilla Extract 
  • 1/4 cup of Almond Milk ****
  • 1 Banana 
  • 1/2 cup of Walnuts 
Method:
  1. Mix all the dry and liquid ingredients in a blender. Pour the mixture in a bowl 
  2. Cut the banana up in pieces, and mash up the pieces in a bowl using a fork.
  3. Mix in the mashed banana and walnuts in the mixture 
  4. Pour the mix into a nonstick muffin pan with some PAM cooking spray. Cook at 350 degrees F for 25-30 minutes 
Can be a healthy snack on the go or your breakfast!

*You can use any type of Oatmeal; I use gluten free type to avoid gluten in my diet.
I use 

Bob's Red Mill Gluten Free Whole Grain, Rolled Oats , because it is

  • Gluten free
  • Manufactured in a dedicated gluten free facility
  • Whole grain so more nutrition and fiber.
  • I love this product because it tastes pure fresh and authentic every time when I use them. 
** ANY TYPE of Protein Powder will do; vanilla flavour goes the best with banana recipes. If you try chocolate or other flavours, let me know how it tastes.


*** My favourite is natural honey is Tropic Bee Orange Blossom

 because it is all natural;gluten and fat free.

****You can use regular milk. If you want this to be healthy, use skim or 1% but I prefer Almond milk because I like it`s creamy texture.
I use

Blue Diamond Almond Breeze Milk Unsweetened Vanilla. It has a very good quality and gluten free and made from real almond.
