Cucumber and Yogurt Salad


Cucumber raita or Cucumber and yogurt salad is very as a side dish for cooling balance for spicy dishes. Try it as a condiment specially for grilled meat orchiken.


Ingredients:
  • 2 cups plain or Greek yogurt
  •    1 tablespoons honey or sugar
  •    1/2 cup thinly sliced English cucumber.
  •    1/4 tsp. ground cumin
  •     ¼ tsp. freshly ground black pepper
  •     2 tablespoons chopped fresh mint leaves
  •     ¼ tsp. Salt.
  •     Chopped tomato (optional)
Method:
1.       Place all ingredients in a bowl
2.       Mix well, and add to serving bowl.
3.       Sprinkle cumin over the top.
4.       Cover and refrigerate at least 3 hours, preferably overnight to let the flavors blend and intensify. .
   Serve on top or on the side of your favorite dish as a dipping sauce.

Note: How to make Greek yogurt at home:
Place 2 /1/2 cups of plain, low-fat yogurt in a strainer lined with several layers of cheese cloth, over a bowl, cover, and refrigerate overnight. Discard the liquid collected in the bowl.
