Red Kidney Beans Mushroom soup with wild rice

This recipe is very good as vegan holiday recipe. You can make your vegan or gluten free guests happy. This is a very good soup recipe for Christmas.
You can enjoy this soup any time, specially
in winter because mushroom has lots of benefit to prevent cold.
Generally, proteins derived from animal foods are complete. But also beans such as red kidney beans can provide a complete protein, when combined with rice or grains. Red kidney beans are low in the amino acid lysine, while rice is rich in this essential amino acid. The art of combining foods with incomplete proteins (such as beans and rice) to create a complete protein.
Ingredients:
  • 2 Tbsp extra virgin  olive oil or canola oil
  • 1 medium red onion, diced
  • 2 carrots diced in small pieces
  • 2  garlic cloves, minced
  • 1/4 cup plus 2 Tbsp gluten free flour
  • 2 cups vegetable or mushroom stock
  • 2 cups soy milk or other non-dairy milk
  • 12 crimini mushrooms, sliced
  • 1 15 oz can kidney beans drained and rinsed
  • 2 tsp dried thyme
  • salt to taste
  • 1 small tomato diced
  • 1 tsp. cayenne pepper or paprika powder( optional)
  • freshly ground black pepper to taste
  • 2 cups cooked wild rice

Method:

  • Heat olive oil in a large stockpot over medium heat.
  • Add garlic and saute until fragrant (but make sure don't burn it other you will have  bitter taste soup,) about 1 minute.
  • Add the onion saute until translucent.
  • Add carrots and saute till to soften, then add flour, and cook for another minute, or until  lightly brown.
  • Add tomato and saute until soft and mushy .
  • Add stock and soy milk slowly, stirring constantly to prevent any lumps from forming. Add mushrooms, kidney beans, thyme, salt, and peppers, and bring to a boil.
  • Lower the heat to simmer, and let cook until mushrooms get softened, soup is thickened, and flavors have melded, about 20 minutes.
  • Add wild rice, allow to heat through, taste for seasoning, add more salt if needed, and serve hot.
Tip: Cook the rice according to the packet instruction.
You can use caned kidney beans or you can cook it at home.
paprika and cayenne pepper are optional if you don't like hot and spicy taste.
To cook kidney beans you have to rinse it properly under water and soak it overnight with 3 times water or at least eight hours. After that drain the soaked water then cook it in pressure cooker with water ( 3 cups for 1 cup ).
Pressure cook it 15 minutes. If you don't have pressure cooker then it will take you 45-60 min to cook with ( 6 cups for 1 cup).
don't use the cooked water of kidney beans because some people get flatulence.
